Blue Cheese Dip
Ingredients
EVERYTHING
- 100 g (¾ cup) blue cheese crumbles (Stilton, Gorgonzola, or Roquefort)
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 tbsp lemon juice (or white vinegar)
- 1 small garlic clove (minced) or ¼ tsp garlic powder
- Salt and freshly cracked black pepper
- Optional: 1–2 tbsp milk or buttermilk (to thin consistency)
- Optional: 1 tbsp chopped fresh chives
Instructions
1. Mash & Mix
- In a medium bowl, combine the blue cheese, sour cream, mayonnaise, lemon juice, and garlic.
- Mash the cheese with a fork until it reaches your desired chunkiness (smooth or chunky).
2. Season
- Season with black pepper to taste.
- Taste before adding salt, as blue cheese is naturally salty.
3. Adjust Consistency
- If the dip is too thick for your liking, stir in milk or buttermilk one teaspoon at a time until it reaches the right consistency.
4. Chill
- Cover and refrigerate for at least 30 minutes before serving.
- This helps the flavors meld together.
Tips & Notes
- Cheese Type: Gorgonzola is milder; Roquefort or Stilton will be stronger and more pungent.
- Lighter Version: Swap sour cream for Greek yogurt.
- Storage: Keeps in the fridge for up to 1 week in an airtight container.
